What’s for dinner?
So I just finished up another First at 4 newscast, and am sitting down at my computer to wrap up my day at work. And that’s when it hits me. I struggle with the same question every night. What’s for dinner? Some weeks I am good and plan things out for the week, or at least Monday through Thursday, but this week I am at a loss. I’ve been sick, and dinner is the last thing on my mind, of course until it’s time to go home and whip up dinner.
Do you struggle with this to? I can’t be alone in this, am I? I know what I’m supposed to do. Marcy at http://www.stretchingabuckblog.com is so good at planning out her meals for the week (or even longer) and then does all the shopping, so her dinners for the week are all planned out for her. Good job, Marcy! And like I said, some weeks I can do that. This week, not so much. I always have plenty of stuff for Caroline. That little lady can gobble up chicken nuggets and yogurt like nobody!
So what’s a wife and mother of one crazy 20 month old to do? Just curious, what your “plan B” for dinner is? Seriously…help a mama out. :)

Hi Ellie,
I spent alot of time making homemade chicken noodle soup for dinner last night. Unfortunately, I didn’t have that much energy tonight and I too had a little one that was pulling at my pant legs screaming for dinner and he wanted it now. So, I went with something fast that didn’t require alot of energy and time and Cameron was happy at the end. We went good ole pancakes for dinner. Cameron LOVES pancakes and Mommy likes them too so we were both pretty happy. As for hubby he opted for leftover soup from the night before : )
Hope you feel better soon…try your best to stay warm!! Brrr, it is SO COLD OUT.

Hi Ellie!
Not all weeks run smoothly in my house…even if my blog says I have a menu! :-)
Some of my favorite “plan B” dinners:
*scrambled eggs or omlets (throw in ham or veggies) and toast
*frozen pizza
* soup and grilled cheese or crackers (cans of Progresso or Muir Glen are my favorites)
* Buitoni (or any brand) ravioli (you can get whole wheat) with some marinara sauce from a jar (Giant Eagle has a yummy organic brand)...
* Grilled Ham & Cheese or Turkey & Cheese
None of these options are fancy, but work in a pinch if you don’t want to go out.
